Pecan Almond Butter Bars

This recipe was adapted from  Color Wheel Meals "Chocolate Banana Sunbutter Bars".

3 cups dried Tropical Fruit & Nut Mix ground into a ball about 13 minutes
1/2 cup oats ground into a flour
3 tsp. good vanilla
2 tbsp coconut
1/2 tsp. sea salt
1/2 cup Almond Butter
1/4 cup dark Maple Syrup
1/3 cup (half and half) honey roasted sunflower seeds and regular plus 1/4 cup pecans, ground into a ball
1/2 cup each dark and milk chocolate chips, melted
 
Place ground up tropical mix with coconut, ground up sunflower seeds and pecans and ground up oats in food processor and process until combined. Add in sea salt, vanilla, Almond butter, and dark maple syrup blend until a ball forms.
Press into a pie or 8×8 glass dish and set aside. Melt the chocolate 50 secs at a time in microwave.  Pour and spread melted chocolate over pressed mixture. Place in freezer for 20 -25 minutes to set the chocolate.
 
Tropical Mix, Chocolate Chips, Ground Oats, Dark Maple Syrup, Almond butter and Sunflower seeds pecan mix.
 
 
 
The Tropical mix will form a kind of dough due to the fruit. "Color Wheels" grounds just the dried banana chips to make a powder.

This is a mix of Ghirardelli chocolate and Nestles milk chocolate chips.



Food processed sunflower seeds and pecan mix. The oil in the pecans causes this mix to form balls as well.

Oats ground into a powder.



Place ground up tropical mix with coconut, ground up sunflower seeds and pecans and ground up oats in food processor and process until combined. Add in sea salt, vanilla, Almond butter, and dark maple syrup blend until a ball forms.

Press mixure evenly into a dish of your choice. Depends on how thick/thin you want them.

Melted chocolate, stir to be sure all chips melt to have a smooth layer over your bars.

Pour, spread and chill. I taped dish on counter to remove bubbles and create a smooth layer of chocolate after spreading.

Use a hot knife dipped in water, wipe dry and cut. Store in air-tight container separated by wax paper.

 These should last for about a month in the freezer, just take out  a section when you want to enjoy!
